Culinary Management

Humber's Culinary Management program is designed to equip students with the essential skills, knowledge and experience necessary for success in the dynamic and competitive field of culinary arts and hospitality management. Through a comprehensive curriculum, hands-on training and industry connections, students will develop the expertise needed to excel in various culinary roles, from chefs and restaurateurs to food service managers and entrepreneurs.

The program provides a well-rounded education that blends theoretical knowledge with practical experience in a state-of-the-art culinary facility. Students will explore a diverse range of culinary techniques, cuisines and trends, gaining a deep understanding of food preparation, presentation and service. The program emphasizes the importance of creativity, innovation and sustainability in the culinary industry, preparing students to adapt to evolving consumer preferences and industry standards.

Students will complete either a paid or unpaid field experience in a kitchen of a leading hotel, restaurant, catering operation or golf course of their choice for seven weeks (32 hours per week) during their fourth semester. Students are also able to apply for field experiences across Canada and internationally, which has jump-started many successful careers.

Qualified students in this program may have a unique opportunity to complete their fourth semester in Italy. This eight-week academic program offers our students a meaningful and challenging experience in culinary arts from an international perspective and is offered in partnership with APICIUS International School of Hospitality at the Florence University of Arts. Students are enrolled with Humber and pay an additional program fee for this Semester 4 optional program. The field experience will also be completed in this final semester.

Students may also be eligible to apply for our annual short duration experiential trips. These faculty-led study abroad trips are confirmed in the Fall semester and are approximately two weeks in length. Qualified students in this program may apply to participate in experiential learning trips to the Mediterranean/Italy where they have a hands-on experience in food culture and lifestyle of the Mediterranean or also be able to experience Japan.

Qualified students in this program may also apply to a study abroad service learning trip to contribute to a global community.

You also can add two semesters upon graduation and earn a second diploma in the Baking and Pastry Arts program. This will make you a much wanted asset in many organizations.

World Association of Chefs’ Societies (WACS)

The program is recognized by the World Association of Chef's Societies (WACS) for meeting or exceeding the WACS standards of quality culinary education and has been awarded international recognition from WACS. Qualified students have the opportunity to earn WACS Commis de Cuisine certification as part of the program.
