Adam Lafleur, who’s chef de cuisine at Toronto restaurant Constantine, has been named as one of Kostuch Media’s 2023 Top 30-Under-30 award winners along with graduates Rob Yu and Anthony Marchisello. Culinary Management Graduate Liezle Espejo was also recognized in the Top 30-Under-30 Awards in 2022.

For the first time ever the Michelin Guide has come to Canada, our Culinary Graduate John Vincent Troiano of Frilu restaurant has been awarded 1 Michelin Star.

Baking and Pastry Arts Management

Program Description

Humber’s Baking and Pastry Arts Management diploma program, taught in our state-of-the-art baking and pastry labs, is designed to propel you into a career in the baking and pastry industry.

Learn how to make impressive confectionery creations such as:

  • chocolate sculptures
  • wedding and specialty cakes
  • tarts and pastries
  • plated desserts
  • artisan breads and breakfast pastries

Program Description

Humber’s Baker Apprenticeship certificate program provides the fundamentals of costing, nutrition, baking, bread making, ingredients and practical applications, cake and cookie production, decoration and design, confectionary techniques, purchasing, and product management. Our program is a balance of theory and practical classes to set you up for a successful career. The apprenticeship component allows you to study and work at the same time – earn while you learn.

Cook Apprenticeship

Length: 4 semesters

Program Description

Humber’s Cook Apprenticeship certificate program provides the fundamentals of menu planning, costing, butchery, garde manger and charcuterie, nutrition, baking, purchasing, and product management. We teach you about supervising kitchen staff in a balanced program of theory and practical classes to set you up for a successful career. The apprenticeship component allows you to study and work at the same time – earn while you learn.

Humber is home to the Ontario Cook Apprenticeship Training Centre, the largest training centre for cook apprentices in the province. The centre has been instrumental in the design of all of the province’s post-Red Seal cook apprentice curriculum. Humber’s apprenticeship curriculum is innovative while following the standards set by the Ministry of Training, Colleges and Universities (MTCU).

Culinary Management

Program Description

Humber’s Culinary Management diploma program teaches you the skills you need to excel as a chef in the culinary industry. Work in the world’s finest dining establishments, and take advantage of international study opportunities. Kick your career up a notch by competing in on-campus, national and international skill competitions.

This program will also prepare you to design, organize, implement, serve and execute your own dinner event in the “Chef's Table” course. Using a market-related themed menu, mise en place and à la carte cooking, students will showcase classical and contemporary techniques and skill.

Length: 2 semesters

Program Description

From the business side of hospitality, to à la carte cuisine, Humber’s Culinary Skills certificate program prepares you for a career as a professional chef. Gain theoretical and practical skills while learning in cutting-edge labs and real-world settings with the latest kitchen technology and equipment.

Many graduates of this one-year program continue on for another year and complete the Culinary Management diploma program or enter our Cook Apprenticeship program.

Students also have the opportunity to experience preparing meals on the Humber Food Truck, Humber’s classroom on wheels.

Work-Integrated Learning

Humber baking & pastry and culinary programs offer unique work-integrated learning opportunities to prepare students for their future careers. Students apply what they’ve learned in professional, on-campus labs and facilities, in real world environment. Some programs include apprenticeship opportunities, while others complete an unpaid work placements in the GTA, or possible placements across Canada and Europe.
