Program Overview

Humber’s Baker Apprenticeship certificate program teaches the fundamentals of costing, nutrition, bread making, ingredients and practical baking applications, cake and cookie production, decoration and design, confectionery techniques, purchasing, and product management. This program is a balance of theory and practical classes to set you up for a successful career. The apprenticeship component allows you to study and work at the same time – earn while you learn.

Humber is home to the Ontario Cook Apprenticeship Training Centre, the largest training centre for cook and baker apprentices in the province. Humber’s apprenticeship curriculum is innovative while following the standards set by the Ministry of Labour, Training and Skills Development (MLTSD).

Note: This program follows professional industry standards for decorum, uniform, hygiene and personal presentation. Practical courses, which take place in a lab, have strict uniform and attendance standards and policies that are mandatory for successful completion of the course.

Apprenticeships are not available to international applicants.

Courses Learning Outcomes

Upon successful completion of the program, a graduate will:

  1. Plan, prepare and present a variety of bakery and pastry products that will meet the diverse needs of food service environments.

  2. Identify and produce baking and pastry that is consistent with the emerging trends in the industry.

  3. Create, produce and manage a full café menu including baking and pastry arts and related beverages.

  4. Apply marketing theories and concepts to a pastry and baking operation.

  5. Support the goals of the pastry and baking operation and the responsible use of its resources through the application of kitchen management skills and knowledge.

  6. Supervise and manage staff according to accepted human resource management legislation and industry standards.

  7. Contribute to the provision of a healthy, safe and well maintained food environment, and to the service of baking and pastry products that are free from harmful bacteria, and other contaminants, with an awareness of potential allergens.

  8. Apply fundamental nutritional principles to all aspects of food production.

  9. Apply cost control techniques to baking and pastry service operations.

  10. Develop strategies and plans to enhance leadership, entrepreneurship, and management in a baking and pastry area for the hospitality environment.

  11. Work effectively independently and as a member of a team in the baking industry.

Work Placement

Students entering this program are already working with a Baker in industry and are registered with the Ministry of Labour, Training and Skills Development (MLTSD).

Admission Requirements

Applicants must meet all the requirements below in order to meet minimum program eligibility. Meeting minimum eligibility requirements does not guarantee an offer of admission. Admission decisions will be available via MyHumber, or by email and mail. Admission decisions will not be released by phone.

Admission selection is based on the following requirements:

  • Academic

    This apprenticeship is regulated by the Ontario College of Trades. You and your employer are required to register through your local Apprenticeship Branch Office of the Ministry of Labour, Training and Skills Development (MLTSD).

    You will be scheduled for the in-school portion of training by MLTSD. Apprentices who have been scheduled for the in-school training will be sent an Offer of Classroom Training letter from the MLTSD. For more information, visit ontario.ca/page/start-apprenticeship.

    Mature Applicants

    Diplomas and Certificates

    An applicant is considered a mature applicant if they have not completed secondary school or other postsecondary school, and will be 19 or older as of the first day of classes. Humber will invite you for testing to demonstrate that you meet all listed course requirements.

    Degrees

    An applicant is considered a mature applicant if they have not completed secondary school or attended postsecondary studies, and will be 21 or older as of the first day of classes. Mature applicants for degree programs will be required to meet course requirements at the U/M level or equivalent.

    College Transfer Applicants

    Diplomas and Certificates

    An applicant is considered a college transfer applicant if they have completed some or all of a college-level credential. Humber may use a combination of secondary school and/or college courses and grades to determine program eligibility.

    Degrees

    An applicant is considered a college transfer applicant if they have completed some or all of a college-level credential. Humber may use a combination of secondary school and/or college courses and grades to determine program eligibility. Applicants must have an overall minimum grade point average (GPA) of 65 per cent in the program. Applicants are required to disclose and provide academic transcripts for all course work completed at the postsecondary level.

    University Transfer Applicants

    An applicant is considered a university transfer applicant if they have completed some or all of a university-level credential. Humber may use a combination of secondary school and/or university courses and grades to determine program eligibility.

How to Apply

Applications to Humber are made through ontariocolleges.ca. Be sure to submit your application by the equal consideration deadline of February 1. You may apply after February 1, however, post-February 1 applications will be considered on a first-come, first-served basis depending on the availability of the space in the program.
