This course focuses on the food and beverage functions for events. The type and quality of food, beverage and service delivery are critical to the success of an event. Students will gain an appreciation of the expertise required to develop menus and pair cocktails with various food styles and the staffing, logistics and venue requirements to properly execute the food and beverage requirements of an event. Topics will include dietary restriction and cultural sensitivities.
